The Aged Leicestershire Red is buttered, cloth-bound and aged for six months. The cheese is characterized by its open texture with a slightly sweet, caramelized taste. The Aged Leicestershire Red is produced according to a traditional recipe. This means that the cheese is buttered, bound in cloth and then ripened for six months. As a result, the cheese has a flaky, open texture with a rich golden orange color. Moreover, it is the only pasteurized Red Leicester produced in the county of Leicestershire. The cheese is produced by the Long Clawson Dairy. Aged Leicestershire Red is an undisputed favorite. The cheese has therefore been awarded gold three times at the International Cheese Awards. In addition, the cheese has also won the Tesco Red Leicester Trophy.
